When the time for fresh new berries comes, you have to make pies and cakes. I found a real easy and quick blueberry pie to which I added some raspberries ( it does not matter what berries you use). The ingredients were simple and the outcome was great. The mint in the filling gave the pie a fresh taste. Note: the pie does not hold it’s form when you take some but in this case it did not matter at all!).
170g of cookies (anything goes, I used dark chocolate once)
25g melted butter
200g sour cream
1 dl brown sugar
2 dl whipped cream
1 grated lime zest
2 tablespoons freshly chopped mint
2–3 dl blueberries
mint leaves for decorations
Crush the cookies and combine them with the melted butter. Press into a pie plate and put the plate into the fridge while you create the filling.
Mix the sour cream and brown sugar in a bowl. Whip the cream and gently mix it into the sour cream and sugar mix. Flavor the filling with lime zest and chopped fresh mint.
Pour the filling onto the crushed cookie crust. Decorate the cake with berries and fresh mint leaves. Put the pie into the fridge for at least 15 mins before serving.
