Plum problem

We have a tree which produces mouth watering plums each year. The three problems I have with this is 1) it produces a lot 2) I’m allergic to fresh plums and 3) I don’t really know what to do with them. So I decided to look for some plum recipes since making only plum jam started getting boring.

Plum pie

I found a pie recipe which turned out to be great and I really want to share it with you readers! Actually it isn’t the plums that only make it great but the dough. So did two different pies using the same dough. The filling is just different.

The dough recipe:

100 g unsalted butter
1 dl sugar
1 egg
2 dl plain flour
2 tablespoon flaked oats
1 teaspoon baking powder

Mix the butter and sugar. Add the egg. Mix the dry ingredients and combine it with the butter mixture.

Cover the pie plate with the dough. Don’t worry, the dough is very sticky and moist. Remember smooth it out as much as possible. Not too thick, it does have baking powder.

PLum pie

So the filling for the plum pie was easy and quick to make. Perfect at least for us moms!

Plum filling:
150g ripe plums
400g vanilla quark
200g sour cream
1 egg
1 tablespoon sugar
1 teaspoon vanilla sugar

Divide the plums and remove the stone. Cut up the plum halfs into slices.Spread the quark over the dough.
Place the plum slices over the quark. Mix the sour cream, sugar and egg until a smooth mixture. Pour over the plums.
Bake in the oven at 175 celsius for 40 mins or until ready. Let the pie cool down before serving.

So there you have it. The other version is exactly the same dough but instead of the plum filling I decided to use strawberries that I had in the freezer.

Strawberry pie I defrosted the strawberries just a bit so I could get them apart. I placed the strawberries on the dough and sprinkled some flaked oats on top. I then put some 4-5 pieces of unsalted butter on top and sugar.
