I’ve been waiting for that moment when the muffins (or cupcakes) I’m making actually turn out really good. I’ve been looking for that muffin recipe that really works and I think I found it. Tiger muffins! The combo of the good recipe and the skills gained from practice paid off (A good recipe is not just enough to create good food). I even did a little muffin dance alone in the kitchen when I was certain I was happy. Horray for me!
200 g butter
2 dl sugar
3 eggs
3 dl plain flour
2 teaspoon baking powder
approx. 1 dl hazelnut spread (e.g. Nutella)
Preheat the oven to 200 celsius. Cream the butter and sugar. Make sure the butter is room temperature. Add the eggs one by one to the sugar and butter mixture.
Mix the plain flour and baking powder together. Add it to the egg, butter and sugar mixture with a beater. Do not use a machine but lightly mix it by hand.
Fill the cupcake liners about three-quarters full. Add approx. a teaspoon of the hazelnut spread on to the dough. Mix the spread into the dough with a toothpick to get the tiger like stripes.
Bake the muffins for approx. 15 minutes. Make sure though they aren’t too long in the oven so they stay moist.
