Sometimes time isn’t on my side and I don’t get to express myself the way I prefer. A few weeks we had some guests over and we wanted to make a cake for them. Unfortunately I did not have time to bake a cake from scratch so I had to rely on the ready made frozen mud cake.
It actually sounds horrible like that but the mud cakes you can find here in the freezers in our grocery stores are actually quite good. Just make the cake look pretty and I’m sure most people at your party will be quite pleased.
I had some pomeranate, dark chocolate, powdered sugar, blueberry-vanilla quark and cream cheese. I mixed the quark and cheese together and added a little of powered sugar to the mixture. The amount is just up to your liking. I then added the mixture on top of the cake and covered the mixture with pomegranate seeds. As the last touch I put little flakes of dark chocolate. To make those flakes I just grated the chocolate with a cheese slicer.
And trust me, it was extremely yummy! If you still haven’t used pomegranate in your kitchen, you have surely missed out on something. Even though the cutting and de-seeding takes a bit of time, it is worth it. You can use it in so many ways or just eat the seeds by themselves. Even my girls love to eat these like candy.
And remember sometimes it is ok to run to the store rather than start baking in a hurry. Just update the cake a bit and your done.
